Chef Del Rio
Chef Dave Del Rio hails from Ybor City, the heart of old Tampa’s Latin community. He began his career in the restaurant industry in 1978. This “spicy guy,” has been instrumental in opening over 100 restaurants. Del Rio’s accomplishments include being the Executive Chef and Director of Culinary Research and Development for Lee Roy Selmon’s and one of the corporate R&D chefs for OSI Restaurant Partners, the parent company for Outback Steakhouse. He has received several awards throughout his career including the ‘Maitre du Gout,’ which is the ‘Master of Taste’ distinction, awarded by Corporate Chefs of America.

3 C’s and Little BS
Chef Del Rio combines “3 C’s and a little BS,” jovially referring to the five melded cooking styles of Cajun, Creole, Low Country, Barbeque and Spanish. He calls his cuisine “Florisiana™” because it combines wonderful influences from both of these Southern states. Chef Del Rio states that “Louisiana is the Cajun/Creole piece based on the Spanish, French, Italian cultures influenced by the African. Then the Florida piece with its melting pot of cultures, including the Spanish and Italian plus the Caribbean influences and of course the “Florida cracker,” which also includes the Southern Soul influence as well as the “country” barbeque, hush puppy and collard green eating folk.”

Shuttle Bus service available for parties between 10 and 14 people. Our friendly driver “Tony” will pick up your group up and bring you to the restaurant and then take you back when you are ready.
